Recipe: Asian Salmon

This quick and simple recipe pairs wonderfully with a serving of Korean noodles for a light, healthy, and fertility-boosting dinner.

Ingredients:

  • 1 piece wild salmon
  • 1 tbsp Dijon mustard
  • 1.5 tbsp coconut aminos
  • 3 tbsp cold-pressed olive oil
  • 1/4 tsp minced garlic

Directions:

  1. Preheat oven to 400 degrees.
  2. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl.
  3. Brush marinade onto the salmon, skin side down.  Let sit for 10 minutes.
  4. Bake in oven for 7 minutes or until desired done-ness.
  5. Remove from oven and enjoy!  Drizzle with more marinade, if desired.

Notes:

  • Use wild salmon.  Farm-raised fish are more toxic due to the feed and antibiotics given them.
  • Coconut aminos are a gluten and soy free substitute for soy sauce.  It's available at Trader Joe's, Whole Foods, Sprouts, Jimbo's and other grocery stores that offer healthier options.  And, of course, Amazon (who bought out Whole Foods).
